The Science of Steeping: Why Temperature Changes Everything in Herbal Tea

If you have ever poured boiling water straight over a tea bag and wondered why the result tasted flat, bitter, or strangely thin, you are not alone. Most people treat tea like instant coffee: pour hot water, wait a bit, done. But herbal tea, especially a whole-leaf blend like Hollyhock Tea, is a different game entirely. Temperature is not a small detail here. It is the single biggest factor separating a cup that tastes like medicine from one that tastes like something you actually look forward to drinking.

At KSF, we get asked about this constantly. People assume that hotter water means a stronger brew, faster. It seems logical. More heat, more extraction, more flavor.


Except that is not really how botanicals work, and once you understand why, you will never make tea the same way again.


Why 100°C Water Ruins More Than It Helps

Water at a rolling boil sits at 100°C. That is fine for black tea leaves, which are oxidized and sturdy enough to handle aggressive heat.


It is also fine for things like dried herbs meant for a long simmer, like a decoction. But for delicate whole-leaf botanicals like Hollyhock (Gulkhera), rose petals, and tulsi, boiling water is too much, too fast.


Here is what actually happens at the cellular level. Plant material releases its compounds through a process of diffusion.


The heat breaks down cell walls and lets flavor compounds, essential oils, and beneficial plant constituents move into the water. This is a good thing, up to a point. But certain compounds, particularly the volatile aromatic oils found in flowers like hollyhock and rose, and in herbs like tulsi, are fragile.


They break down or evaporate rapidly at very high temperatures. So instead of extracting a full, rounded flavor, boiling water strips out the delicate floral top notes almost immediately, leaving behind the more bitter, tannic compounds that survive heat better.


That is the paradox. Boiling water gives you a stronger cup in terms of bitterness, but a weaker cup in terms of actual flavor complexity.


You lose the soft, floral opening notes of hollyhock and rose. You lose the gentle herbal roundness of tulsi. What is left tends to taste sharp, flat, or vaguely medicinal.

The 85°C to 90°C Window

This is why we recommend steeping Hollyhock Tea in water between 85°C and 90°C, not a full boil. If you do not have a temperature-controlled kettle, there is a simple trick: boil your water, then let it rest off the heat for about one to two minutes before pouring.


That short rest brings boiling water down into roughly the right range without needing a thermometer.

Why does this window work so well? At 85 to 90°C, water still has more than enough energy to break down plant cell walls and pull out flavor, color, and beneficial compounds.


But it is gentle enough to preserve the volatile oils that give hollyhock and rose their characteristic floral aroma, and that give tulsi its distinct herbal freshness. You get extraction without destruction. The result is a cup that tastes layered instead of one-note.


You get that soft floral opening, followed by the natural sweetness from mulethi, and finished with the gentle warmth of cardamom and sun-dried ginger.


Think of it the way a chef thinks about searing versus slow-roasting. Both apply heat, but the outcome depends entirely on how much and how fast. Herbal tea rewards patience over intensity.


Why Steep Time Matters Just as Much

Temperature gets most of the attention, but steep time is its quiet partner. Too short, and you are basically drinking flavored hot water.


Too long, and certain compounds, especially tannins from botanicals like rose petals, start to dominate, giving you that dry, slightly puckering sensation on your tongue.


For Hollyhock Tea, two to three minutes covered is the sweet spot. Covering the cup matters more than people realize.


It traps steam and volatile aromatics inside instead of letting them escape into the air, which means more of that floral fragrance actually ends up in your cup rather than just in your kitchen.


If you have ever noticed that your tea smells incredible while steeping but tastes muted once you drink it, an uncovered cup is often the reason.


We tested this extensively while developing our blend. At under ninety seconds, the tea is pale, thin, and mostly just warm water with a hint of ginger. At the two to three minute mark, everything comes together.


The floral notes are present but not overpowering, the mulethi sweetness rounds things out, and the spice notes settle in nicely. Push past four or five minutes, and the balance starts to tip.


The tea becomes heavier, slightly more bitter, and the delicate top notes get buried under stronger, more astringent flavors.

Cold Brewing: A Completely Different Extraction Process

Cold brewing works on entirely different physics, and it is worth understanding separately. Instead of using heat to speed up extraction, cold brewing relies on time.


Steeping Hollyhock Tea in cold water for eight to twelve hours in the refrigerator lets the water slowly and gently pull out flavor compounds without ever triggering the heat-sensitive breakdown that affects hot brewing.


This produces a noticeably different cup. Cold brewed Hollyhock Tea tends to taste smoother and less astringent, because the slow, low-temperature extraction pulls fewer bitter tannins into the water compared to hot brewing.


The floral notes come through in a softer, more rounded way, and the overall drink feels lighter and more refreshing, which makes sense given that most people reach for cold brew during warmer months or as an afternoon refresher rather than a morning ritual.


If you are trying cold brew for the first time, we recommend two to three sachets per 500 ml of cold water. Less concentrated than that and the flavor can feel washed out after half a day of steeping. More concentrated, and you risk an overly intense, slightly bitter result once it has had twelve hours to develop.

Why Water Quality Actually Matters Too

This part surprises people. The water you use is not a neutral background ingredient. It is roughly ninety-nine percent of what is in your cup. Hard water, meaning water with high mineral content, particularly calcium and magnesium, can interfere with how flavor compounds dissolve and can leave a slightly chalky or dull aftertaste.


Heavily chlorinated tap water can mask the more delicate floral and herbal notes entirely, since chlorine has its own distinct smell and taste that competes with everything else in the cup.

Filtered water, or water that has been left to sit uncovered for a few hours to let chlorine dissipate, tends to give a noticeably cleaner result.


You do not need bottled spring water or anything elaborate. Just a basic filter or a simple Brita-style pitcher makes a real difference, especially with a blend built around delicate florals like hollyhock and rose.

Why This Level of Detail Is Worth Caring About

It might seem like a lot of fuss over a cup of tea. But this is really the whole philosophy behind why we do things the way we do at KSF.


We use whole-leaf material, not tea dust, specifically because whole leaves and whole flowers hold onto their essential oils and flavor compounds far longer and release them far more gracefully than crushed, powdered material does.


That care in sourcing means nothing if the brewing process undoes it in the final step.

A lot of herbal tea brands assume people will just dunk a bag in hot water for however long feels right and call it done. And honestly, that will still produce a drinkable cup.


But drinkable and genuinely good are two very different standards. Once you dial in temperature, time, and water quality, the difference is immediately obvious, even to someone who has never thought twice about how they make tea before.

The Mistakes We See Most Often

After talking to hundreds of customers about their brewing habits, a few patterns keep showing up. The first is reusing the same sachet for a second cup. Once the initial steep pulls out the bulk of the flavor and aromatic oils, a second steep tends to taste thin and mostly just warm and slightly sweet from whatever mulethi is left behind. If you want a stronger second cup, it is better to use a fresh sachet rather than stretching one across two brews.


The second common mistake is walking away and forgetting the tea is steeping. Life happens, the phone rings, someone walks in with a question, and five minutes later you come back to a cup that has gone from balanced to noticeably more bitter. Setting a timer sounds almost too simple to mention, but it genuinely solves this problem.


Two to three minutes goes by faster than people expect, especially compared to the five or six minutes some people are used to from stronger black teas.


The third mistake is pouring water straight from a kettle that has just reached a rolling boil, without any rest period at all. We understand the instinct. Boiling water feels like it should make a "proper" cup, the same way it does for black tea.


But with delicate florals like hollyhock and rose, that extra thirty to sixty seconds of rest before pouring genuinely changes the outcome. It is a tiny habit change with a disproportionately large effect on flavor.

The fourth is squeezing or pressing the sachet at the end of steeping, thinking it will extract a bit more flavor.


In practice, this usually just releases more tannins and bitter compounds that had not fully diffused into the water yet, which throws off the balance you worked to get right in the first two to three minutes. It is better to simply lift the sachet out and let the cup be what it is.

Does the Brewing Vessel Matter

This comes up less often, but it is worth a quick mention. Glass and ceramic retain and release heat differently than metal, and both work well for herbal infusions.


Glass has the added benefit of letting you actually watch the color develop as the botanicals steep, which some people find genuinely enjoyable, particularly with a blend like ours where the rose petals and hollyhock release a soft amber-pink hue into the water.


Metal travel mugs and insulated flasks are convenient, but they hold heat for much longer than an open ceramic cup.


If you are steeping directly in an insulated flask and plan to drink it over the next hour or two, consider removing the sachet after the standard two to three minutes rather than leaving it in, since the sustained heat inside an insulated vessel will continue extracting well past the point of balance, often resulting in a noticeably more bitter drink by the time you get around to your second sip.

A Simple Brewing Checklist

If you want the short version to keep near your kettle, here it is.

For a hot cup: bring water to a boil, then let it rest for one to two minutes before pouring.


Steep one sachet, covered, for two to three minutes. Remove the sachet before it oversteeps.

For cold brew: use two to three sachets per 500 ml of cold, filtered water. Steep in the refrigerator for eight to twelve hours, then remove the sachets and enjoy straight from the fridge.


For both methods: use filtered water where possible, and always keep your cup covered while steeping to trap the aromatic oils that give this blend its character.

The Bottom Line

Temperature is not a minor technical detail reserved for tea enthusiasts. It is the difference between a cup that tastes muddy and bitter and one that actually reflects everything that went into growing and sourcing the botanicals in the first place.


Hollyhock, rose, tulsi, mulethi, cardamom, and sun-dried ginger were never meant to be blasted with boiling water and rushed through in thirty seconds. They were meant to be steeped with a bit of patience.


Once you get the temperature and timing right, you will notice things in the cup you probably missed before. The floral top note that opens things up. The gentle sweetness underneath. The warmth that lingers at the end without being harsh.


That is the tea doing what it was actually designed to do, and it only takes an extra minute or two of attention to get there.



Try it the next time you brew a cup. Let your water rest before pouring, keep your cup covered, and give it the full two to three minutes. It is a small change, but it makes a real difference in the glass.
